WIAW:Spend time to save time and raw / cooked balance

Hi guys! How’s your week going? Hope it’s been a good one so far! Mine has been busy, busy as usual. I’m very glad I had that I spent the time having my cookathon at the weekend to make things easy for me this week!

Peas and Crayons

These are my eats and goings on from yesterday. For breakfast (after warm water with a squeeze of lemon) I made a big bowl of custard oats with two fresh figs and almond butter:

I make the custard oats by whisking in an egg while they are cooking on the stove top, you can see a guide to how to do it from the fab Susan. I also added in some vanilla bean paste and a pinch of sea salt, delish!

Refreshment came in the form of a masala chai tea with unsweetened almond milk:

It’s getting so cold now in the mornings! I wore this lot and then added my fave chunky scarf and a pair of gloves!

I have to say I’ve had some awesome purchases from Primark in the foot ware department recently, those studded boots are surprisingly well made, I love them!

I went straight to a work meeting and then back to the office where I immediately tucked into some of my home made raw cheesy spicy kale chips:

I had another meeting and stuff to sort at work and then I came home so I could work on an application for one of the community groups we work with.

Lunch was a big salad with cos lettuce, cucumber, red onion, chickpeas, olives and green goddess dressing:

Mid afternoon I had a little pink lady apple with maca and cinnamon:

I used to eat this snack all the time but haven’t had it in ages. Its a nice way to get some of the super food maca into your diet other than in a smoothie – if you like the taste of maca that is!

Later I had a rice cake topped with peanut flour made into ‘butter’ and naturally sweetened strawberry jam:

I think after I’d reblogged this image on my Tumblr feed I had a serious PB&J craving! Before the gym I had a matcha green tea:

At the gym I did 30 minutes of cardio on the machines in the gym before my Body Pump class which was great as always. I’m seriously thinking I need to make the effort to increase my weights next week!

Dinner was some of my delicious Black Bean and Sweet Potato Chilli served with steamed kale and spring greens:

When I’d made the chilli at the weekend I’d used both black beans and red kidney beans. I love a good chilli at this time of year!

For a little dessert I ended up making a mini protein pudding by mixing a scoop of vanilla sun warrior protein powder with raw coconut flour and water and then topped with a few cacao nibs for crunch:

A bit random but it was just what I was fancied. I also had a mug of sweet chai tea:

I think I have about 7 different versions of chai tea, both black and herbal in my kitchen!

Getting a lot of cooking done at the weekend has made this week so much easier for me, no stressing about what to cook for dinner as I’ve had things pre prepared. Its so much better having a few portions of chilli ready – especially when it includes carbs, protein and veggies like my chilli does, then its just a case of reheating and serving with extra veggies if I want. Having some cooked beans in the fridge along with plenty of salad dressing means I can always knock up a salad that will satisfy me for lunch. The raw kale chips also make perfect grab and go snacks.

I’ve also been finding that my raw / cooked food balance has been pretty good. I love my raw food and definitely make an effort to eat raw when it feels right, but as the weather cools off I feel a natural attraction to more cooked foods. Snacks are definitely an area where its easier to eat raw at this time of year for me, especially when accompanied by a warm mug of green tea!
