WIAW: A very typical day

Hello guys, how we all doing? Hope you are having a great week! I’m on a bit of a wind down now as on Friday me and James are off on our little holiday and I just can not wait :-) Glad so many of you enjoyed my Healthy Eating on a Student Budget post, of course its not just useful for students but anyone generally looking to eat healthily on a budget. In fact it reminded me that I need to get back on the budget wagon again! But for now, it’s Wednesday and of course that means one thing:

Peas and Crayons

I started my day with warm water and a squeeze of lemon, apple cider vinegar and water and then hit the gym. I did my workout 1 with a 5 minute warm up on the cross trainer and followed by 10 minutes of high intensity intervals on the bike at the end. After my workout I popped to the shops for some groceries before coming home and getting settled for a day of working from home.

Breakfast part 1 was 2 farm shop eggs scrambled with half an avocado and some sea salt:

Not getting sick of that combo anytime soon! After that I made breakfast part 2, a big smoothie with frozen blueberries, 3 plums, ice, unsweetened almond milk and water:

I just love how productive I can be when I’m working at home and I had a great morning getting so much done. One of the things I love so much about working at home is being able to use my tea pot. Throughout the day I drank tea – I use one green tea bag and a herbal chai spice type tea bag for a lovely warming blend. I must have had about 4 big pots of tea by dinner time!

I took a break for lunch and had this amazing salad:

Cos lettuce, cucumber, organic feta, cherries and balsamic dressing. Insanely good! Mid afternoon I was getting hungry again and couldn’t figure out what I was craving – I wanted a bowl of cool creaminess and some crunch so ended up making a green smoothie with lots of fresh spinach, vanilla sun warrior protein powder, stevia and a bit of ice blended with just a little water topped with a bag of We Are Bear Coco Cherry Pie Granola and some fresh strawberries:

That well and truly hit the spot! For dinner I baked some tempeh that I’d marinated in shoyu, garlic and ginger along with a sweet potato stuffed with almond butter and some steamed broccoli on the side:

One of my favourite simple dinners right there, yum! A bit later I decided to try and make a dint in the epic amount of fruit I have in the fridge with a fruit plate:

Strawberries, cherries and figs. Can’t get much better than that!

I finished the day with an un pictured mug of cococardio hot chocolate – these evenings are starting to get chilly!

As I was looking back over this post I realised that so far as is possible considering that I tend to like a lot of variety, this represents a pretty typical day of eats for me at the moment – I’ve definitely found a nice groove of things I like – eggs and smoothie for breakfast, salad for lunch, something random for snacks, sweet potato with nut butter, tofu or tempeh and steamed greens for dinner and fruit with perhaps some chocolate or yoghurt for ‘dessert’. No doubt as I’ve just said that I’ll completely change it up next week probably ;-)
