The Secret Garden
I had my usual Tuesday morning date with Davina doing 30 mins of 'Pump' with additional bent over rows and push ups. I was so hungry after that and totally inhaled my breakfast which was blueberry vanilla porridge - oats, chia seeds, water, hazelnut and almond rice milk, scoop of vanilla whey and frozen blueberries topped with a tiny spoonful of cashew butter to finish off the jar.
Thanks for all your comments about my lack of focus, you've given me some great ideas to try and sort myself out! I made a real effort to improve my focus and sit and try and get things done today. I made myself work in 45 min slots then stop for a tea break and then back on to it again. That approach really seemed to work and I felt much more organised and like I was actually getting stuff done.
Lunch was the last of my home made coleslaw with a baked chicken breast and mixed salad, followed by an apple.
I am going to miss my coleslaw, it has been so tasty. I could eat it with everything!
This afternoon I went up to see one of the community projects I've been supporting. They run a little nursery in beautiful victorian walled garden and wanted to expand their business to involve volunteers, offer horticultural training, support people with disabilties and mental health issues etc. They have plenty of spare land within the garden and are planning to turn part of it into a vegetable patch. I just had to take a few photos while I was there. Its like a secret garden!
Doesn't it look wonderful? They've promised that they will teach me how to grow my own veg at some point soon and I'm hoping they might pass some of their fresh produce my way when they start growing. I can't wait! I didn't want to come back to work, its just so peaceful there.
When I eventually dragged myself back to the office I had more carrot and cucumber with lemon and coriander hummus as an afternoon snack.
For dinner I baked one of my veggie bean burgers in the oven and served it with stir fried red cabbage, white cabbage, carrot, red onion and spinach with a little ketchup. I ended up with a huge pile of veg! I needed to use up some of the left over cabbage from making the coleslaw and this was so tasty all stir fried up.
After I'd eaten the burger I added a bit of soy sauce to the veggies, totally tasty! For desert I made a little fruit salad with some red grapes and three chopped kiwis.
Drinks - water, green tea, decaf tea
This whole deal with the volcano and planes is so crazy! I feel sorry for all the people stranded across the world but its almost like mother nature is showing us all who's boss! It makes you realise what a huge interlinked global system we are all part of. There even saying that it will start effecting the supermarkets soon in terms of air freighted fresh produce. Just another reminder that I should make more effort to eat seasonal and as locally produced stuff as possible! I tend to just try and buy whats on special offer in the supermarket as that tends to be what they have a lot of (hopefully because its whats in season) and therefore need to get shot of. Oh well, I've just got my fingers crossed its all sorted out for my holiday to Majorca in June!
