Happy Valentines Every One!

What a lovely day I've had! Didn't have any plans for once so decided that I would have a cooking day. Got up bright and early and headed to sainsburys for it opening, got loads of stuff, theres nothing I like more than a full fridge. I began by cooking some health Choco Banana Protein muffins. I got the recipe from Rachels blog. They turned out really well -


I'm planning on having them as pre workout snacks, yum!

I then made some Chilli Bean Soup -


I used: 1 onion chopped, 1 orange pepper chopped, 1 carrot chopped, 2 cloves of garlic finely chopped, 1 tin of kidney beans, 2 cartons of chopped tomatoes, 1 tablespoon of tomato puree, hot chilli powder to taste and veg stock. I fried off the onion, pepper and carrot then added the rest of the ingredients and simmered till the vegetables softened. This makes 4 portions - I've got a couple in the fridge for lunch this week and I've frozen the other two. I also made some bean burgers but forgot to take pics! I used 2 tins of kidney beans, chopped spring onions and grated carrot and then roughly blended it. I added some hot chilli powder and a little bit of spelt flour to bring the mixture together. I've made them into burgers and wrapped in cling film to freeze.

So that was todays cooking! Food wise today has been good. Breakfast was another green monster (spinach, banana, ground flax and hazelnut and almond rice milk)





I had an apple as a mid morning snack, then poached eggs on wholemeal toast for lunch -





Followed by a bowl of two chopped pears -




For a mid afternoon snack I had more raspberries in hazelnut and almond rice milk (I think this is my new addiction! It tastes wonderful). Then for our healthy valentines dinner I made a stir fry with chicken, brocolli, carrot, mushrooms and red onion with soy and ginger (the hubby had noddles with his) -






- and for desert we had some of my muffins, smeared with peanut butter! Fabulous!

Me and the hubby don't make a massive deal of Valentines day as we think its a little over comercial. We tend to do more on our aniversary as thats our special day. He was at work all of today so it was nice for us to sit down and have our meal, and I was especially happy as thats the first time he's joined me in eating a stir fry (he's generally trying to be more healthy so I'm cooking more meals that we can eat together).

Well I'm off to cuddle up with the hubby and watch 'Chuck', how romantic! xx
