Give me sunshine

Hi guys, hope your having a great week! I’m so glad that the sun made an appearance in the North East today, I was starting to feel like I was getting seasonal affective disorder! Thanks for all your comments to yesterday’s post on tuning in to my body and intuitive eating, it was very interesting to read your thoughts on the topic.

Well I have had a busy few days. We have had some wonderful news though, my hubby James has a new job which we are incredibly happy about! This job is much more secure than the one he is in now so its a big stress out of our lives :-)

I’ve had a couple of super workouts, yesterday morning I hit the gym for some speed work on the treadmill followed by some intervals on the machines and my abs and core for a brilliant 1hr 15 min workout. This morning I did Yoga for Runners and this evening I’ve been back at the gym for some cardio and my beloved Body Pump!

Yummy eats have included this gorgeous breakfast of porridge (cooked using Carries method – seriously I will never eat oats any other way again!) mixed with 1 scoop of peanut butter swirl spiru-tein powder, fresh strawberries and topped with a big spoonful of PB&Co Dark Chocolate Dreams:

This morning I made a delicious Carrot-Banana-Coconut smoothie inspired by Emilia’s version:

This contained 3 medium carrots, 1 frozen banana, coconut water, 1 tbsp coconut flour, ice, xanthan and guar gums then topped with treacle pecan granola and coconut butter crumbles. This absolutely rocked my face off! I loved the mix of flavours and the beautiful sunshine colour, it felt perfect for eating on such a sunny morning!

I had a gorgeous salad for lunch today:

Spinach, romaine, carrot, sugar snaps, cucumber, radish and chickpeas with a amazing dressing made from my blueberry balsamic, extra virgin olive oil and dijon mustard. The balsamic is just so syrupy and sweet!

Dinner both evenings has been some ‘Mexican rice’ containing brown and red rice, black beans, chopped tomato, red onion, hot chilli powder, lots of coriander and half an avocado on top of a pile of steamed greens:

Loved this mix of ingredients, I can’t believe I used to hate coriander!

To provide some much needed extra protein after my body pump class this evening I made a big pillowy bowl of Fruit-ein protein ice cream topped with goji berries:

What are your favourite ‘sunshine’ foods? I love anything tropical or Mexican themed to make me feel summery. Now all we need is the weather to match it! :-)
