A quinoa creation

I had a super duper breakfast this morning! Peanut butter and jam yoghurt mess - brown rice puffs, grape nuts, ground flax, natural yoghurt, tablespoon of crunchy peanut butter and tablespoon of strawberry jam, how tasty?!


...and a green monster! Frozen banana, spinach, hazelnut and almond rice milk, teaspoon of maca.


Altogether now!


= Totally fab breakfast.

I was still continuing with 'Operation Focus at Work' today. I am getting a little better thankfully and managed to crank out quite a bit of work today so I was very pleased. Mid morning I had the last of my hummus with some carrot and cucumber.

For lunch I had a bowl of lentil and spinach soup which was absolutely gorgeous, followed by some red grapes.


Before I left work for the gym I had a cup of lady grey tea with half an apple pie nakd bar.


The fruity tea went really well with the fruity nakd bar!

I had a brilliant workout at the gym. I felt really strong throughout and didn't feel as wiped out as I usually do. I changed up the my order on the cardio, I usually do treadmill, cross trainer, bike then stepper but today I did treadmill, stepper, cross trainer, bike. I don't know if that was what made the difference. I finished with my 3 sets of my usual abs exercises and I'm continuing to include the plank in with them. I finished off with a bit of stretching.

As I'm still trying to use up leftovers / freezer / store cupboard stuff until I hit the shops with my pay tomorrow, I made a veggie and quinoa creation for dinner.

I fried up a chopped onion with two cloves of garlic then added a cup of quinoa and two cups of hot veg stock. While that was bubbling away I added a chopped carrot, chopped red pepper and sliced red and white cabbage. When the quinoa was cooked I added a handful of spinach leaves. I guess you could just call this a quinoa and vegetable mess?


Well whatever you call it this was tasty! It looks so pretty as well with all those colours from the veg, I'm glad that it worked out well. Desert was some chocolate orange protein goo.

Not much of the week left now - I'm at a conference for work tomorrow which makes it a nice short day, plus I have Friday booked off, so today kind of feels like the end of my working week! I'm going to hit the supermarket tomorrow after the conference as its right next to a Tesco Superstore and I will be getting paid on Friday (so I can overdraft it till then). Looking forward to getting another big haul! I have a brilliant weekend planned from Friday through to Sunday including a date night with the hubby, visiting my sister and sister in law, cooking and baking, chilling out and going to a gig with one of my best mates, oh and not forgetting a big long run, yoga and strength training! Its going to be a busy one! Hope all your weeks are going well x
