Vegan Cream Cheese Experiment
Today I have been enjoying working from home. This meant that I could get a workout in first thing so I hit the gym nice and early. I was really tired this morning and wasn’t looking forward to a 30 minute treadmill run but once I got going I felt great. I did some speed intervals:
- 0 – 0.5 miles – 6mph
- 0.5 – 1 miles – 6.5mph
- 1 – 1.5 miles – 7mph
- 1.5 – 2 miles – 30 second sprint intervals – 6.5 – 7.5 mph
- 2 – 2.5 miles – 7mph
- 2.5 – 3.1 miles – 30 second sprint intervals – 6.5 – 7.5 mph
- 3.1 – 3.3 miles (to get to 30 minutes total) 6.5 mph
This was such a great workout, after the issues I’ve been having with my running mojo I was very happy. I also did 2 sets of my abs and core exercises including a 60 sec plank (my usual is 30 seconds!)
I was in need of a filling breakfast after that so I made a huge green monster containing 3 big spring cabbage leaves (with stalk removed) 1 large frozen banana, frozen mango chunks, a large tablespoon of smooth peanut butter, agave syrup, xanthan and guar gums and kara coconut milk. I topped this lovely creation with Rude Health Granola, goji berries and desiccated coconut.
Amazing, this gave me so much energy!
Mid morning I made a lovely Butterscotch decaf coffee to go with my usual cups of green tea. Lunch was more of yesterdays gorgeous Confetti Quinoa Salad:
I also had two small kiwi and a satsuma:
Mid afternoon I made myself a bowl of miso soup with some grated diakon, chopped spring onions and minced ginger.
I also had an unpictured small russet apple.
A little while ago I picked up this pack of vegan cream cheese to try out:
I thought I’d try and make a meal with it today: Wholemeal and Veggie Spaghetti with Cheese Sauce. I cooked some organic wholemeal spaghetti and made some vegetable ‘pasta’ with a courgette (using my spiraliser) and some cabbage. I fried off a couple of finely chopped shallots and a clove of garlic then added 1/3 of a pack of the cream cheese, a splash of soy milk and a teaspoon of nutritional yeast to make a creamy cheese sauce. I continued to add more soy milk to create a sauce the consistency of single cream. I also added a little more nutritional yeast and seasoned with salt to taste. I added the spaghetti and veggies and coated them in the sauce:
This was delicious! As it is, the cream cheese does taste fake and kind of powdery but not inedible. However, in this recipe its worked really well with the additional flavours. Its actually the perfect texture for this kind of dish.
Desert was two chopped apples with some dark chocolate with hazelnuts:
My chocolate stash is huge so I need to start eating it up to make room for new stuff!
Have you tried any vegetarian / vegan products like soy cheese, non dairy ice cream, quorn, fake meats etc? I’m happily experimenting with these products at the moment as I ‘flirt’ with veganism. Although I much prefer to eat unprocessed foods its good to find out if these alternatives are any good for occasional use. If you’ve tried them what did you think?
