Recipe: Peanut Butter Pretzel Chocolate Bark

A couple of weeks ago I hinted that I had a great recipe planned using my current foodie obsession: Pretzels. Well this is it! I’m not kidding you when I say this is to die for! Its like a Reece's Peanut Butter cup got together with a bag of pretzels and made a beautiful tasty baby. To be honest this is so simple I can hardly call it a recipe, enjoy!

Peanut Butter Pretzel Chocolate Bark (can be vegan if using vegan chocolate)

  • 100g of chocolate (I used Green and Blacks 70% dark, but you could use whatever chocolate takes your fancy)
  • 50g of salted pretzels (I used Sainsbury's brand)
  • 3 tbsp of crunchy peanut butter

Break up the chocolate into pieces and melt either in a microwave or over a double boiler. Once melted add 2 tbsp of crunchy peanut butter and combine. In a separate bowl crush the pretzels (reserving a few for the top) into smaller pieces.

Fold the crushed pretzels into the melted chocolate and peanut butter. Line a baking tray or pan with grease proof paper and spread the chocolate mixture into a thin layer (I made mine roughly rectangular but it could be whatever shape you like).

Using the remaining tbsp of peanut butter, dollop small amounts onto the surface of the bark and using a knife tip swirl the peanut butter into the chocolate. Crumble the remaining pretzels on top and lightly press down into the mix.

Grab a spoon and proceed to clean out the bowl that had the melted chocolate in, this is mandatory ;-) Place the tray into the fridge and allow to harden for a couple of hours. Chop into pieces or keep as a whole piece and just break off bits as required:

Store wrapped in greaseproof paper in the fridge. If it lasts that long…

This would also make a great gift, and the recipe is endlessly customisable: you could add dried fruit, nuts, different nut butters, cacao nibs etc. It reminds me of those fancy giant chocolate slabs you can get from Hotel Chocolat! The recipe could also easily be doubled to make a bigger piece, holy yum!
