Pumpkin spice and all things nice

Well what a week it has been! It’s always tough coming back to work after some time off so I feel like I’ve been playing catch up with pretty much everything, not just work! As I said on Wednesday I am really feeling a need to spend some time in the kitchen prepping some good food :-)

However, I did have a cupboard full of Libby’s to keep me going! Pumpkin has definitely been a highlight of the week for me, I don’t want to be a healthy living blogger cliché but some times you just can’t help it!

I made some pumpkin spice porridge just mixing it with cooked oats, cinnamon and ginger. Finished off with a splodge of Coyo and it was perfection:

After yesterday’s workout I made a pumpkin spice protein smoothie:

This was so incredibly delicious – just 1/3 can of tinned pumpkin, a scoop of vanilla sun warrior protein powder, unsweetened almond milk, cinnamon, ginger and vanilla stevia with some ice too. Gorgeous!

Other highlights have to include a big salad with edamame, figs and tahini miso dressing:

I found Sainsbury’s selling figs for £1 so I got a couple of packs since I couldn’t get the super cheap ones from the market (until today that is!). I also had some with more of that amazing Coyo:

This weeks workouts:

  • Saturday – REST
  • Sunday – 30 minutes cardio on cross trainer, step machine, bike, Kettlecise class
  • Monday – 5 min warm up on cross trainer, new strength training workout 2 10 min HIIT on bike
  • Tuesday – 30 minutes cardio on cross trainer, step machine, bike, Body Pump class
  • WednesdayYoga for Runners Podcast, 20 minutes
  • Thursday – 5 min warm up on cross trainer, new strength training workout 2 10 min HIIT on bike
  • Friday – REST

farmers market

This morning I got up early and went through to Newcastle to check out the little farmers market. The veg stalls only seem to be around in October and November and I got some lovely organic locally grown goodies. I also got a few things from Waitrose, the Grainger Market and Sainsbury’s for an epic  grocery shop ready for this weekend’s cookathon. Also…

So this weekend is all about catching up and cooking for me. I feel like I have a never ending to do list! Hence I decided to stick in a day off from work today just to give me some breathing space. We might be off to a gig tonight too!
