Pear and ginger, honey and sea salt…
…have been the themes of my weekend! Today I made some Raw Pear and Ginger Granola in the dehydrator (recipe to come) and yesterday I made some Pear and Ginger Spelt Pancakes!
Pear and Ginger Spelt Pancakes (vegan, serves 1)
- 1/2 cup of spelt flour
- 1/2 tsp of baking powder
- 1/2 tsp of cinnamon
- 1/2 tsp of ground ginger
- 3/4 cup of rice milk (or other non dairy milk)
- 2 small chopped pears
- 5 pieces of candied ginger, chopped
- Your choice of syrup to serve (I used Sweet Freedom, but I can imagine maple syrup being amazing!)
- Optional – dark chocolate chips or cocoa powder
Combine the flour, baking powder and spices then mix well with the rice milk. Pour the batter into a frying pan on a medium high heat, forming into pancakes. Drop small pieces of chopped pear into the batter as they cook. When bubbles appear on the surface, flip and cook the other side. Serve warm with the chopped pear, candied ginger and syrup:
After I’d made these I wished that I had added some chocolate chips or cocoa powder to the batter for a pancakes reminiscent of my favourite ginger flavoured dark chocolate!
I also made my current favourite salad again:
Cavolo Nero (black kale) massaged with apple cider vinegar, hemp oil and coconut aminos, romaine, red cabbage, raw beetroot, figs, walnuts rolled in honey and sea salt plus more honey and sea salt on top, NOM!!! I got the coconut aminos ages ago from Viva Pure. It is basically a raw salty seasoning made from coconuts and I love it!
For dinner, I made up a batch of my Veggie Chilli but used black beans instead of kidney beans:
I love this chilli, its so simple but tastes amazing every time! I served with some millet and steamed broccoli, perfect autumn dinner!
For some evening snackage I made a huge bowl of popcorn and decided to go with the honey and sea salt combo again:
I love sitting with a big bowl of popcorn in front of the TV, this was yummy!
Breakfast today was a delicious post run smoothie containing beet greens, frozen blueberries, chocolate sun warrior, maca powder, barley grass powder, purple corn flour, water, ice, gums and stevia topped with some muesli and a spoonful of sunflower seed butter:
The colour of this was beautiful!
I went out for a great run this morning, my first outdoors one in a couple of weeks, and it was great. I did my hilly route which I haven’t ran since before my knee injury in August. I did 7 miles in 1hr02 average pace 8.50 which is a huge improvement on my pace the last time I ran it :-)
I had a marathon Sunday Cook Up Session today too - I made a pot of brown rice, pearl barley, some garden pate, cannellini beans, roasted a massive squash and made pumpkin seed milk. I then made a pot of spinach, barley and white bean soup (I’ll share that recipe soon too!) and used some of the roast squash and beans for dinner:
Roasted squash, brussel sprouts, cauliflower and broccoli (in coconut oil) with herby white bean mash (cannellini beans, sweet white miso, dried thyme and sage). I loved the mashed beans, definitely going to make that again!
Other weekend activities include a catching a coffee with my Mam, Dad and nephew and returning that stained dress from last week and exchanging it for a couple a great new pieces for my wardrobe. I also went to see my two besties and called in to see my Gran :-)
