Peanut Butter Cups and More Snow!
Awoke this morning feeling slighly heady after my red wine last night, even though I only had one glass (Ok so it was a large glass!). Fancied a nice breakfast so thought I would break into some of my new foodie purchases from yesterday. I made some 'muesli' with porridge oats, jumbo porridge oats, quinoa flakes and ground flax with hazelnut and almond rice milk and a chopped apple.
I pottered about for a bit taking pics for my monster shopping spree post as well as generally organising my wardrobe and sorting out which winter clothing should be put away in storage to make room for my new purchases. After I sorted all of that out I went for a run. Its a weird feeling, I almost get nervous before I go out as I think that for some reason I'm not going to be able to do it or its going to be really, really tough. Its not a long distance (just over two miles) as I'm just getting into running. I was totally fine and probably could have ran much further. I think I'm going to do more running this week as I'm off and try and increase that distance a bit. I got home just as the snow started to fall. For a post run snack I had some cottage cheese with raisins.
For lunch I had a lovely warming bowl of chilli bean soup with a nice ripe nectarine.
Then I started on making some Peanut Butter Cups! I have to confess that Reeses Peanut Butter Cups are my favorite thing. I bought up loads of them from the Herseys store in New York when I was there a couple of years ago as well as this fabulous giant mug! I have taken the recipe from Averies blog (which is fabulous, the recipes are amazing!) but slightly amended it by using a mixture of smooth peanut butter and cashew nut butter for the filling. In between each stage I popped them in the freezer and I'm going to store them in the freezer too as the filling can get quite soft otherwise.
I had one as a snack with a cup of decaf tea and I have 5 of these left to snack on during the week, heaven!
For dinner I made another healthy pitta pizza with salad.
And now I'm going to enjoy another glass of red wine!
Drinks - water, green tea, decaf tea, red wine
Question - what favourite 'naughty' foods (although I don't think any food should be thought of as naughty but you get what I mean) do you have and have you found a healthier version of it? I don't know what it is but for me the healthier version tastes better because I can eat them without the guilt or feeling like I'm putting unhealthy processed stuff into my body.
