Pancakes, yum!
Sorry for the highly unoriginal blog post title! But I do love my pancakes.
I'm in a really good mood today, I had a sneaky mid week weigh in and I've lost the 4lbs I put on last week. It seems that it must just have just been a strange temporary thing, thank godness! Thanks again for all the lovely comments, they really cheered me up and kept me motivated.
Started the day with my Davina Super Sculpt DVD and then had a smoothie for breakfast -

I had loads of spinach left over so thought I'd experiment with a untraditional green monster. I ditched the banana and made it with frozen blueberries, handful of spinach, oats, ground flax seeds, 1 scoop of vanilla protein powder, skimmed milk. You couldn't really taste the spinach and it tasted just as good as usual but with the added goodness! For lunch I had an apple and then a goats cheese salad with added spinach leaves, cucumber, red onion and grated carrot -

My mid afternoon snack was carrot sticks and red pepper hummus which I scoffed down again! I was very excited to get home from work and make my tea - spelt flour pancakes with banana, yoghurt, agave and cinnamon -
Spelt Flour Pancakes Recipe
250mls skimmed milk
2 medium eggs
1 cup of organic wholemeal spelt flour
1 tablespoon of oil
Mix all the ingredients together to make a thick batter. I used some spray oil and a hot frying pan and poured a small amount of the batter into the pan and swirled it round a bit to spread the batter more thinly. They cook really quickly so keep an eye on the underneath and when its browned flip over and do the other side. I kept mine warm under a very low grill until they were all done then chopped my banana on top and added some low fat natural yoghurt and agave syrup and a sprinkle of cinnamon. They tasted wonderful - the batter makes a lovely plump spongy pancake -

I've just had another apple to fill me up and I think I'll have a nice decaf tea before bed.
Has anyone else heard the reports about the price of fruit and veg? I was listening to the radio and apparently their price has increased massively, especially carrots and cauliflower. I've really noticed the increase in my food shopping bills anyway and the last thing we need is for healthy food to get even more expensive. Lets hope things improve soon, or I'll be even more skint!
