My one monthiversary!

I realised earlier today that yesterday it had been 1 month since I started this blog. I can't believe how quick the time has passed! I am really amazed at what a difference it has made to my life, blogging every day has given me a place to consolidate all my thoughts, keep me focused, and share my journey with others. I have learned so much from reading other blogs, it really has opened up a whole new world to me, I had never dreamed of trying something like rice milk or nut butters! It has also made me realise that I am not alone in this quest to become fitter and healthier. A big massive thanks to all my followers and anyone else who reads, when I started the blog I honestly didn't know if anyone would read it at all so thank you, thank you, thank you!

Anyway, back to today!

For breakfast I had a chopped apple with oats, raisins and natural yoghurt with a sprinkle of cinnamon. I know it doesn't look that appetising in the pic but it tasted lush!

As a mid morning snack I had carrot sticks and hummus again, I'm really enjoying having that as a snack as it seems to keep me feeling more full than when I snack on fruit. For lunch I had a bunch of red grapes followed by some chilli bean soup (it exploded in the mircowave hence why the bowl looks such a mess!)

In the afternoon I was out visiting a community centre and they had some organic coffee so I thought I might as well give it a try, it was lovely and it kept me awake during my meeting! I had been planning on having one of my muffins as a snack but totally forgot to put one in my bag this morning in my hurry to leave the house so I nipped to the co op and got a banana instead. I had that before I hit the gym and it certainly had the desired effect - I had a great workout again!

Dinner was a steamed chicken breast with salad including spinach (those bags of spinach are so huge, I feel like I'm eating it with everything at the moment, which I don't mind as it is good!), grated carrot and cucumber. I also added a big dollop of light mayo.

After I had this I made myself another bowl of hazelnut and almond rice milk with frozen raspberries. I think the rice milk is going to become a regular grocery item from now on, I can not tell you how much I love that stuff!

Drinks - water, green tea, lemon and ginger tea, decaf tea, 1 cup of organic coffee.

Exercise - I hit the gym after work and did my usual cardio workout, and I kept up with the increased speed intervals on the treadmill from Monday too. In total I did 80 mins of cardio (run on treadmill with intervals, cross trainer with intervals, stepper with intervals, rowing machine, bike) followed by my abs sets.

Glad that today is nearly over, had quite a few meetings but tomorrow and Friday I don't have any so I can get loads done in the office, and I'm off next week! I can't wait, I get paid on the Thursday and I'm planning on a bit of a spree, plus I can finally get my food processor and make fudge babies!
