Good Food Day
I have had a day of some really lovely eats! Got up and had a cup of green tea before doing 20 mins of Davina Kick Fit followed by some strength training working my triceps, back, abs and bum. I thought I'd make myself a bit of a different breakfast so made some cinnamon raisin protein pancakes.
Cinnamon Raisin Protein Pancakes
2 egg whites
2 tablespoons of spelt flour
1 scoop of vanilla whey powder
Enough skimmed milk to create a thick batter
1 tsp of ground cinnamon
2 tablespoons of raisins
Mix all ingredients together well. I used some spray oil and a hot frying pan pouring in half the mixture and then swirling it round a bit so it spreads out. It only takes about a minute each side. Makes 2 pancakes. I served mine with half a chopped banana and agave syrup.
They were gorgeous! Every time I have pancakes I feel like I'm getting a treat!
After I devoured these I went about making some homemade fuel bars. I had read loads of different recipes on various blogs for these kind of bars so I looked at their ingredients then modified things a bit to suit what I was after. I want something that will form a small snack to eat before going to the gym to fuel me up and give me some energy:
Angels Fuel Bars
1 1/2 cups of porridge oats
2 scoops of vanilla whey powder
4 tbsp of smooth peanut butter
1 mashed banana
1/4 cup of raisins
1/4 cup of chopped dates
1 tablespoon of honey
2 tablespoons of mixed seeds
a little water to make the mixture come together
I mashed the banana and then added all the other ingredients except the water and mixed well. I only needed a tiny bit of water to bring the mixture together. I lined a square cake tin with clingfilm and pushed the mixture into the tin and covered with more clingfilm. I then popped the tin into the freezer for a couple of hours to let it firm up. When it had hardened a bit I took it out and chopped into 9 squares then wrapped each square in tin foil and returned them to the freezer to store.
My friend said to try it in my stir fry tonight but I never caught its name!
After our little bit of shopping I snacked on an apple and two babybel light.

The higher sugar raisins, dates and honey should provide some faster release energy with some slower release energy from the oats and peanut butter. I can't wait to have one but I'm being strict and keeping them for work outs!
For lunch I wanted to try some of my new savory whole grain rice cakes. I topped them with cashew butter and half a chopped banana along with a chopped carrot and a pear. They tasted really good, the sweetness of the nut butter and banana went well with the savory saltiness of the rice cakes, delicious!
After lunch I popped through to my Mam and Dads. They were looking after my Nephew Harry so played with him for a while and then shared a couple of juicy clemintines with him.
I then went to see my best friend we sat and drank tea for a bit then popped into town to do a bit of grocery shopping. I usually get all my fruit and veg from the supermarket but she encouraged me to try the market. I got a load of stuff including a weird white carrot type thing with a name I can't remember, does anyone know what this is?

I was still hungry after this so I stopped by boots and got a little snack bag of mixed nuts.
After I picked James up from work we came home and I started on making my monster stir fry. I used chicken breast, brocolli, carrot, strange white carroty thing, red onion, mushrooms, spinach, soy sauce and ginger!
I could live off stir fries! You couldn't really taste the white carroty thing, probably because of all the other stuff. For desert I made us up some fruit salads (at my husbands suggestion! I was amazed as he doesn't eat much fruit and veg, however we have been eating more meals together recently and he has lost half a stone!) including chopped apple, orange and green grapes (plus a chopped banana for him). I topped mine with a little melted dark chocolate.
Have really enjoyed every bit of food I've put in my mouth today, although I feel like I've ate loads so I might reign it in a bit tomorrow.

I think we are also going to finish off our bottle of red from last night night as well.
Well today has been an overall fab day, don't you just love days like that? We've been able to leave most of the stress of last week behind which is just what we needed. It was really good to catch up with my best friend today as well. She's invited me round to hers next week for a mini dinner party and she always cooks the most amazing meals, can't wait!
