Brighton Wishlist
Woo hoo its Friday and I'm so happy! Glad to be finished work and off for a week, feel like I really need it despite only being off three weeks ago. I had my weigh in this morning and had lost another 2lbs! I haven't really been trying to lose, I've just been eating in line with what I would usually have so I'm very happy. More slack for some holiday related weight gain me thinks! That means that I'm back down to my lowest weight of 9st10lbs (136lbs). I know its just a number on the scale at the end of the day, but I find it the easiest way to keep myself on track.
This morning I hit the gym for 20 mins of HIITs on the cross trainer and step machine then did my weights routine and finished off with 20 full sit ups and a couple of 30 second side planks.
Breakfast was a yoghurty mess with some fromage frais mixed with a scoop of chocolate whey, fresh strawberries, mixed berries and some We Are Bear Coca Cherry Pie Granola (my fave).
Very yummy.
Lunch was a salad beast containing tuna, cannellini beans, courgette, green pepper, carrot, spinach, romaine and some spicy peri peri dressing.
I love my huge salads, so satisfing. I also had a bowl of chopped peach and orange.
Mid afternoon I had some caramelised onion hummus with cucumber slices for dipping.
I flew out the door from work at 4pm and headed home to to a bit of cleaning, tidying and blog reading before the hubby finished work. I had a gorgeous Chilli Chai Tea Pigs, a crunchy apple and a Wear Are Bear Strawberry Yoyo. I was having a bit of a snacky moment!
For dinner I made a wonderful chicken noodle stir fry with spicy peanut and lime sauce -
Chicken and Noodle Stir Fry with Peanut Lime Sauce
1 Chicken Breast chopped into bite sized pieces
1 small courgette, spiralised into noodles (or made into ribbons with a veggie peeler)
1 small carrot, spiralised into noodles (or made into ribbons with a veggie peeler)
Half a red pepper finely sliced
Soba Noodles
For the peanut sauce -
2 tablespoons of soy sauce
Juice of 1 lime
Heaped teaspoon of smooth peanut butter
Teaspoon of minced ginger
Half a teaspoon of finely chopped chilli (or more if you like it hot!)
Start by making the peanut lime sauce. Mix together all ingredients until smooth and set aside. Stir fry the chicken breast until almost cooked through, while the chicken is cooking boil the soba noodles until cooked. Add all the spiralised veggies to the pan along with the chicken, and stir fry for two to three minutes. Add the cooked soba noodles to the pan. Plate up and cover with the peanut sauce.
This was wonderful! I even managed to eat the whole thing with my chopsticks for once (usually I give up and get the knife and fork!) Desert was a chopped apple and some Prestat Choxi chocolate from my chocolate stash. This chocolate is gorgeous - I can highly reccomend it!
I'm mega excited to be off to Brighton on Sunday. We are staying with my Aunt and Uncle who live down there. I adore my Auntie, she's so cool and even says the F word in that posh way that people down south do. It never sounds as bad with that accent!
I've been considering what is on my wish list for my trip -
Chockywockydoodah chocolate - My 21st Birthday cake was from this shop. They make the most amazing chocolate creations. I always treat myself to something when I'm in Brighton.
Good quality skincare and make up - I like browsing in the Kiehls store and MAC and I think I might treat myself to some of my favorite body lotion - Kiehls Creme de Corps:
And perhaps a pillar box red MAC lippy ready for the autumn / winter
I don't want to be buying anymore summer clothes so I'll be on the look out for things to wear Autumn / Winter. I've been checking out some of the style blogs for what the new season stuff is like, although I certainly don't follow trends that much. I could so with some basic tees and I might try GAP or American Apparel for those -
Oh and just before I go, I came across this selection of gorgeous sounding vegetarian recipes. If your a vegetarian or like me, your not but enjoy vegetarian food, you should find some inspiration here. I like the sound of Heston's Garden Salad, one of the ingredients is grape nuts cereal which has made me wonder what that would be like as a salad topping? Tomorrow I have my 6 mile run first thing, then I'll be doing a bit of packing, catching up with my friends and heading to my cousins engagement party. Do you have much planned for the weekend?
