Back in my stride

Well last night was a total snack fest. For some reason I really wanted sweet dried fruit so I hit the dates and raisins in a big way. I wasn't too worried about the snackage considering my weight loss and being in the holiday mind set. This morning I was up early as usual for my run. I had lemon and hot water and half a 9 bar for some fuel.


I had been planning on running 6 miles this week. I've only been running once a week slowly increasing my distance since my knee injury. Today's run was just awesome, I really felt like I've got my stride back. I seemed to have boundless energy (I'm thinking the date and raisin snackage last night could have been responsible for that), and my knee was almost completely pain free. I felt so good I ended up pushing up to 7 miles instead of 6. Unfortunately my Runkeeper iPhone app lost its GPS, so my times and distance weren't recorded properly but I know I was blasting through the miles at an average pace of around 9.30, or perhaps quicker. I came home, did some stretching and foam rolling (I've been using the foam roller every day since I got it and it has made a really big difference to my knee - I would totally recommend it).

I then got on with breakfast. I wanted pancakes! I made up a batch using 3 egg whites, a scoop of my new chocolate peanut butter swirl spirutein, a little soy milk and half a teaspoon of baking powder. The pancakes turned out perfectly. I served them in a stack with fromage frais, fresh strawberries and agave syrup.


I enjoyed a lovely mug of English Breakfast Tea as well, just perfect!

For lunch I made up a home made egg white and spelt wrap (3 egg whites and 2 tablespoons of spelt flour) and filled it with turkey, spinach and caramelised onion hummus. I also had some cucumber and red pepper strips on the side.


Sooo good, turkey and hummus is the business! I also had a little peach and an orange.


I decided to have my 'dinner' early as I'm heading off to my parents shortly to get ready for my cousins engagement party. I had a repeat of yesterday's lunch - a huge salad with beans, tuna, courgette, green pepper, carrot, spinach and romaine. I topped it with some balsamic dressing.


Yum! I also had an apple.


I'm taking this little pot of fromage frais with the other half of my 9 bar chopped up and mixed in with some agave plus an apple to snack on before we go out.


This should help to hold me off as I doubt the buffet at the party will be Laura friendly food! I won't be drinking either as I'm the designated driver so I'll be sticking to lime and sodas!
