Scoping things out in Brighton

Hi Everyone, I thought I'd do a quickie post to tell you about my day. I'm having a great time in Brighton so far and have managed to get some web time on my Uncles laptop!

I was up at 4am this morning so that we could get an early start and miss the traffic. I made a gorgeous green monster (spinach, frozen banana, soy milk, maca powder) and topped it with some Dorsets Cereals Roasted and Toasted Muesli.


This set me up for my journey! We were travelling down with my parents so it made a nice change for me not having to drive. We had a couple of stops and I had a Skinny Cinnamon Latte, apple and coco orange nakd bar to keep me going.


I also snacked on an unpictured bag of nakd orange raisins and another apple. We made really good time and did the journey in 6 hours. We got changed and headed straight for the beach. The hubby really fancied some fish and chips so I thought I'd might as well treat myself too.


They were ok, but not great so I felt a bit disappointed that I'd 'wasted' those calories!

We had a good wonder around the shops while I scouted out some potential purchases. I got really excited when I found a place called Lick that serves frozen yoghurt and I had a big serving with dark chocolate chips, strawberries and raspberry sauce.


It was delicious and I will definitely be making a return visit there! I also had a beetroot, carrot and apple juice.


My Aunt made dinner tonight - ham, salad, coleslaw and the most delicious olive and tomato bread.


iPhone pics as I didn't want my camera flashing off every two minutes! I had another slice of bread when I'd finished this. Desert was two little bowls of this raspberry triffle -


Plus a small square of this home made carrot cake.


Yum! I've had an amazing day of eats! I've also picked up a few little purchases -


I'll give you more info on these in another post, believe you me there is going to be a whole post on my shopping by the time I've finished!

Rediscovering Trout

I know thats a totally random post title, but stay with me!

I had my weigh in this morning and I stayed the same as last week which I'm very happy about considering that I was expecting a gain. But it still doesn't shed any light on what the hell my body is doing in terms of whether I have a 4 week gain / loss 'pattern', nevermind, onward and upward!

I had the best bowl of porridge this morning, it was well tasty! I nuked a frozen banana and some frozen strawberries (first time I've bought these, but I'll be getting them all the time now!) for a few seconds until they had softened a bit, then added regular and jumbo oats and some water and microwaved until thick and creamy. I then added some hazelnut and almond rice milk to cool it down a little and topped with fresh chopped strawberries and a spoonful of cashew butter.


For a mid morning snack I had half a tub of cottage cheese with a chopped apple topped with maca and cinnamon.


Lunch was more kale and chickpea salad followed by a pear and a plum


I had the other pear and plum later in the afternoon when I got back from going to a teen health event which I had supported a community group to develop. It was brilliant, part of it was about healthy eating and the ladies who ran it had some brilliant simple little ideas for breakfast, lunch, dinner and snacks that young people could easily make again at home like curried chicken salad pittas, breakfast 'trifle' which was yoghurt and fruit compote layered with granola, and mini cheesecakes which were a light digestive biscuit spread with low fat cream cheese and topped with fresh fruit. It was brilliant to see the young people enjoying making their own healthy food.

For dinner I decided to make something with one of the trout fillets I had picked up from the reduced section last week and frozen. I haven't had trout in absolutely ages. I made asian steamed trout by placing the fillet on some foil and covering with fresh minced ginger, garlic and soy sauce then wrapping it up and steaming for 10 mins. I then served the trout with some stir fried veggies.


This tasted so good! I'll definitely be buying more trout, its cheaper than other fish such as salmon and since its an oily fish its also high in omega 3's.

For desert I decided to get a bit experimental.

Chocolate Peanut Butter Frozen Yoghurt

1 tub of 0% Greek Yoghurt
1 tablespoon of cocoa powder
1 tablespoon of agave syrup
2 tablespoons of peanut butter

Mix the yoghurt, cocoa powder and agave together either by hand or in a food processor. Gently fold in the peanut butter if you want your frozen yoghurt to have chunky ribbons of peanut butter through it or thoughly mix in if you just want the taste throughout. I dropped little spoonfuls of peanut butter into the yoghurt and then very gently mixed it. I went heavy on the pb as I love the stuff but you could just use the one tablespoon if you wanted. Freeze until yoghurt reaches desired consistency. I left mine for about two hours and it was perfect.

Exercise - Rest Day

I was so glad to get home today and be able to chill. I have the rest of the evening to myself as the hubby has his friend over so I can just relax, read magazines and catch up on TV. Today also saw the arrival of my new Heart Rate Monitor.


I decided to get one to help me with my Great North Run training. Thankfully I don't need to pay out a fortune for a Garmin type thing as my Runkeeper iPhone app has been fantastic for tracking my mileage. The upgraded version even talks to me through my headphones and tells me my pace, distance covered etc, its brilliant! I decided to get this Oregon SE138 after reading a review in a magazine along with its relatively affordable price (£40 from fitnessmonitors.com). I'm looking forward to trying this out on my run tomorrow.

I'm aiming for 6.5 miles so wish me luck! As well as my long run tomorrow I will be cleaning the flat (which I didn't do last weekend!) doing my strength workout and a quick yoga work out, grocery shopping and I have a big girly night in planned with my two best friends. Its been ages since we've had a get together, I can't wait!

Getting my raw on

This weekend has been another nice and relaxing one, its been lovely! I’ve visited my parents who were taking care of my nephews for the weekend and seen my two best friends – I love just sitting chatting with them over a cuppa! I have spent some time in the kitchen getting my raw food vibe back on. I’ve made some very delicious fudgy raw protein cherry almond brownies (recipe to come), raw almond and sunflower seed milk, raw tamari ‘roasted’ almonds and of course my usual green juice:

Cucumber, celery, ginger and lemon plus a random kiwi fruit, very good. I’ve been feeling the need to include more raw foods into my diet again and its been fun making some new things! My home made almond and sunflower seed milk was so gorgeous and creamy:

I used half a cup of almonds and half a cup of sunflower seeds to make a full litre of it and used some in a big bowl of strawberries with muesli:

Amazing, and perfect for refuelling after my run this morning! I’d went out and ran about 5.5 miles in the bright, but bitterly cold weather. It was tough because it was so cold and I know I was pretty slow, but I went out and did it which is the main thing! I followed up my muesli with a vanilla protein frappe:

On Friday night I was off to visit one of my friends so before I went out I made a quick Buddha bowl:

Nice and simple but oh so good! Steamed greens topped with a cubed baked sweet potato, pinto beans, courgette, cucumber and red onion plus some soy sauce, yum!

Yesterday I fished some of my wholemeal bread out of the freezer for breakfast. I toasted it and topped with a thick layer of cashew butter and some sliced strawberries on the side:

Accompanied by another giant pot of coffee it sorted me out a treat! Lunch was a basil tofu salad:

Delish as always!

For dinner last night I fancied a different wholegrain than my usual rice or quinoa so I cooked up a pot of nutty chewy wheat berries. I mixed them with some edamame, spring onion, fresh parsley, dried blueberries and a zesty fresh dressing of hemp oil, lemon juice, apple cider vinegar and soy sauce. I served it with some steamed broccoli:

It tasted really good, I love wheat berries and the nutty hemp oil, fresh lemon juice and sweet blueberries tasted great together. I had the rest of it today for lunch just served on top of some lettuce:

Last night I had a special treat for dessert, home made strawberry coconut milk yoghurt!

I made this just the same as my frozen yoghurt recipe but used half a can of full fat coconut milk instead of the greek yoghurt. I left it out of the freezer for a good 40 minutes and even then I had to hack it into pieces with a knife, but its worth it! I’m going to make this again but freeze it into ice pops! You could even make this raw by using soaked and blended cashews, yum!

I’ve got a pretty exciting week coming up as I’m going to be running my first healthy eating workshop with young people! I’m working with a local community project as a volunteer for a few weeks to test out my approaches before I start charging for sessions. I’m a qualified youth worker but its been a while so I’m a bit nervous! I’ve been brain storming some ideas all weekend but I think I’ll be starting out with nice and simple smoothies – I might even see if I can get them to try a green monster!
